Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow dish, mix breadcrumbs and grated Parmesan until combined.
In a bowl, mix olive oil, minced garlic, oregano, and basil. Season with a little salt and pepper.
Coat the chicken breasts evenly in the marinade mixture.
Press each marinated chicken breast into the breadcrumb-Parmesan mixture until well coated.
Place the coated chicken on the prepared baking sheet.
Scatter the cherry tomatoes around the chicken, then add the mozzarella slices on top or beside the chicken (as preferred).
Bake for 15–20 minutes, or until the chicken is cooked through and the coating is golden. Let rest 2 minutes, then serve.
