Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella cheese sliced

Equipment

  • 1 Baking sheet lined with parchment paper
  • 1 Shallow dish for breadcrumbs mixture
  • 1 Bowl for marinade
  • 1 Tongs optional, for coating chicken

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix breadcrumbs and grated Parmesan until combined.
  3. In a bowl, mix olive oil, minced garlic, oregano, and basil. Season with a little salt and pepper.
  4. Coat the chicken breasts evenly in the marinade mixture.
  5. Press each marinated chicken breast into the breadcrumb-Parmesan mixture until well coated.
  6. Place the coated chicken on the prepared baking sheet.
  7. Scatter the cherry tomatoes around the chicken, then add the mozzarella slices on top or beside the chicken (as preferred).
  8. Bake for 15–20 minutes, or until the chicken is cooked through and the coating is golden. Let rest 2 minutes, then serve.

Notes

  • Crispier coating: Spray a light mist of oil on the breaded chicken before baking for extra crunch.
  • Cheese tip: Use good Parmesan for deeper flavor; mozzarella can be added near the end if you want it less browned.
  • Doneness guide: Chicken is done when the center reaches 165°F (74°C).
