Method
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a large bowl, whisk together the melted butter, egg, and vanilla extract.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups.
- Bake for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
